It’s cold out, the days are shorter, people are staying in and cooking, and everyone’s trying to save money for the holidays. As such, potatoes are the answer to all your problems. A bag will last weeks, most dishes you will make are hearty enough that they will last you a few days or you will have plenty to share, and there are so many different, creative things you can do with them. Here are just a few of the most awesome!
1. Potato Soup
All you need is potatoes, cream, stock and spices, plus whatever other meat, veggies, and additives you want to throw in there. You can even use soy cream and make vegan potato soup. Here is one awesome recipe.
2. Potato Curry
This tasty vegan meal can feed a bunch of people, and you can whip it up with some choice spices, onions, rice, and other veggies, like peas and carrots. You can also add some beef or lamb if you prefer a carnivorous dish. Here is one recipe, and there are plenty of different variations to try.
3. Baked Potato and Chili
Make some chili however you like it, and then bake it up in a potato with some cheese, sour cream, and whatever else you want to add. This interesting recipe calls for salsa and zucchini chili, but there are so many different ways you can go!

Hanukkah is not quite here yet, but it is never too early to start enjoying some delicious latkes, or fried potato pancakes, for the non-Kosher savvy. Here is a good recipe for these tasty treats.
